GF Chocolate Banana Bread Recipe

Happy Saturday everyone!
Hope you are all enjoying the weekend. My biggest achievement today was baking a tasty Gluten Free -almost vegan- Chocolate Banana Bread. If you just replace the eggs with something else then it will be vegan! It was really easy, moist, sweet and full of goodness. It went really well with my rose white tea *mashallah*
ingredients
Start with pre heating oven while you do everything else. 180C.
Ingredients:
1 1/2 cup gluten free plain flour
1 cup white sugar
1 cup brown sugar (I found the cake a little sweet so if that's too much try half and half of each)
1/2 cup coconut
3/4 cup unsweetened coco powder
1 1/2 tea spoon baking powder
1 1/2 tea spoon baking soda
1 tea spoon matcha tea (I used the one from tea pigs)
tiny splash of ginger, cinnamon and salt
One light soya cream
1 cup warm water
2 eggs (if you replace these with something else it will be vegan, but not sure with what)
Three mashed bananas (peeled them and mashed them with a fork)
Three table spoon of coconut oil (you can use 1/2 cup of veggie oil if you prefer)
1/4 cup crushed walnut (crushed them by hand- you can skip these, but I thought they are beneficial)

I put dry ingredients first then liquid (in the order mentioned above)

Then mixed it for two minutes with a mixer. Poured it into two oiled and floured pans.
After 50 minutes they were ready! my oven just takes ages, so after 35-40mins start checking if it's ready by sticking a knife in it and seeing if it's dry or not.
Results!
It turned out really well *Alhamdilah* very pleased with the results and it filed the kitchen with the loveliest smell *YUM!*
This bread is perfect for mornings! little bit like a muffin but moister. Comment below for extra tips or if you try it! Enjoy ;)
