Mean Chilli

Happy Thursday all!

Today I cooked some MEAN Chilli and it turned out really well and so delicious, so I thought I will share it with you and I had it with some Iraqi style rice *yay for multiethnic food* 



This following portion is for two-three people

Ingredients For the Chilli:
1 onion
1/4th kilo minced beef
salt
1 medium peri peri Nando's rub - I used these to give it a ting of heat, which gave it some, but not too much- you can replace it with other spices and chilli powder.
3 tbs of ketchup - I used it instead of the diced peeled tomatoes, but either is fine
1 can of kidney beans
1 can of baked beans
1 cup of water
4 tbs of tomato purée
paprika, garlic, cumin, black pepper

Method:
Dice the onion and put in frying pan on medium heat, stir until onions soften
Add the minced beef and salt, stir until browns, cover for few minutes
Add the peri peri Nando's rub, stir, add ketchup and 1/4 cup water and leave to cook for 15mins
Add kidney beans, baked beans, the rest of the water, the tomato purée and the rest of the spices. Let it cook for another 15mins or till beef is ready. I served it with Iraqi rice, but you can have it with simple white rice.  

Ingredients For the Iraqi Rice: 
1 1/4 cups of washed rice - I used long grain-
2 1/2 cups of water
crushed spaghetti
butter
salt

Method:
Take few strands of spaghetti and crush them to mini pieces.
Add the butter to the pan and the mini pieces to fry. Keep stirring until they are golden brown.
then add the rice, the water and the salt -be careful at this step coz the pan is hot and it's got butter so with the water addition there might be a little splash- keep for 20mins or until rice is ready. Use a sieve to get rid of the extra water. Then return the rice to the pan with another small piece of butter and cover. Leave on very low heat for few mins. This step dries the water and make the rice yummier.
